Peanut, Coconut Sauce Stir Fry

This recipe is great because it can be different every time you make it.

Just choose ingredients that are on sale and experience a new, delicious, healthy stir fry that feeds lots, or will make a great meal prep for the week.


Vegetable, Rice and Meat Ingredients

  • 3 types of vegetable of your choice. (sale of the week)

  • 2-3 chicken breast

  • 2 cups of brown rice or chopped potatoes (Fraser Coast Fresh $1Kg)

Sauce Ingredients

  • 4 tablespoons natural peanut butter (2.99 - ALDI)

  • 1/2 can coconut milk or cream (89 cents - ALDI)

  • 2-3 tablespoons soy sauce

  • 1 onion chopped finely (Shallots - Fraser Coast Fresh $1 Bunch)

  • 1/2 teaspoon finely chopped (minced) garlic -Local Farmers Market

  • 1 cup of chopped mushrooms

  • 1 teaspoon finely chopped (minced) ginger root Local Farmers Market

  • 1 teaspoon hot sauce optional

  • 1-2 tablespoons chicken broth from cooked chicken

  • Optional toppings: 1/4th bunch cilantro, sesame seeds, peanuts


- Steam 3 types of vegetable (add water as needed) in a large pan.

- Cook rice or potatoes.

- Combine together chopped onions, garlic, mushrooms, ginger root. Slow cook half way through. Then add bite size chopped chicken breast.

After the ingredients are almost cooked add coconut cream or milk, soy sauce, peanut butter, and hot sauce/hot pepper seeds. Stir continuously.


Now plate rice and veggies with the delicious chicken, peanut, coconut sauce smothered on top.


Extra - Add salt, pepper and whatever spices you like to experiment with. There are no rules! Lets make cooking healthy and FUN!
