Chicken with Pumpkin Sauce

Ingredients Serves: 4 

  • 500g chicken breast, cubed

  • salt and black pepper, to taste

  • 1 garlic clove, crushed

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 1 small onion, grated

  • 1 cup chicken stock

  • 100g grated Parmesan cheese

  • 300g cooked and mashed pumpkin

  • 1 tablespoon chopped coriander, to garnish

Directions

  1. Season the chicken with salt, pepper and garlic then marinate for 15 minutes.

  2. Heat a frypan then add the butter, olive oil and onion. Sauté for a few seconds.

  3. Add chicken and saute a little for a few seconds or until it begins to brown.

  4. Add the chicken stock, cheese and pumpkin then simmer for 20 minutes or until chicken is tender.

  5. Pour the chicken on a platter, sprinkle the coriander over the top and serve hot.
