Chicken with Pumpkin Sauce
Ingredients Serves: 4
Directions
Season the chicken with salt, pepper and garlic then marinate for 15 minutes.
Heat a frypan then add the butter, olive oil and onion. Sauté for a few seconds.
Add chicken and saute a little for a few seconds or until it begins to brown.
Add the chicken stock, cheese and pumpkin then simmer for 20 minutes or until chicken is tender.
Pour the chicken on a platter, sprinkle the coriander over the top and serve hot.
